Ingredients for 4 people
250 grams of bolus beans.
250 grams of rice.
250 grams of pork ribs.
2 cloves of garlic.
1 ripe tomato to sauté.
Saffron.
1 and a half liters of water.
Salt
Olive oil (EVOO)
The day before preparing the dish, soak the beans in water.
The next day we put them in a saucepan with water to boil, “tricking” them several times with cold water to stop the boiling.
When the beans are cooked, we save the water from the last cooking.
Season the ribs with salt.
We peel and chop the garlic.
In a deep frying pan, heat the oil and fry the ribs and garlic, as well as the tomato.
Once browned, add the rice, salt and saffron, letting it cook over low heat until dry.
